Recipes
Butter bean, grilled courgette, roast red pepper & chorizo salad
Summery salad that is filled with lovely veg. I made a few adjustments - skipped the peas and added extra broad beans, used chunks of chorizo sausage, multi-coloured peppers and subbed butter beans for cannellinis as they taste better, fact.
Luscious lemon baked cheesecake
Quick and simple to make, this cheesecake is a massive winner. Smooth and creamy with a sharp lemon tang. Be careful not to overbake it, you want a wobble when it comes out of the oven.

By the time you read this I will be at Wilderness Festival. A Hix feast of lobster, steak and chocolate mousse, multiple street food vendors and Ben Howard await...and the weather isn't looking too bad. Excited much?! And that is the reason for the mini issue, sorry about that. Next week I'll be back with a proper sized newsletter.
